1 cup roasted tamarind
2 cups plain sour milk
1 small grated cucumber
1 small tomato, finely chopped
1 green chilli, finely chopped
1/2 teaspoon roasted cumin powder
1/2 teaspoon black salt
salt to taste
How to make machana raita (Steps for making machanaraita)
First, dry roast the eggplant in a pan over medium heat until it turns golden brown and crispy.
When cooled, mash the grilled eggplant into small pieces. By using your hands or a rolling pin.
In a mixing bowl, beat plain yogurt until smooth and creamy.
Add grated or finely chopped cucumber, chopped tomato and chopped green chilli to the curd.

Add roasted cumin, black salt and regular salt according to your taste in the raita.
Transfer makhana raita to a serving bowl and garnish with chopped coriander and fresh mint leaves.

1 bowl of grilled bean sprouts
1/2 cup chopped boiled potatoes
1/2 cup roasted peanuts
Chopped green chilies 2
1 tablespoon lemon juice
Rock salt according to taste
1-2 teaspoons black pepper powder
2 teaspoons chopped coriander leaves
1 teaspoon roasted cumin powder
How to make Makhana Bhel (Steps to make Makhana Bhel)
Put the potatoes, green chillies, chopped coriander, cumin, black pepper, salt, and lime juice in a bowl.
Mix these things together. All spices should be mixed well.
Now add the makhana and peanuts and mix for the last time.
